Our bees create honey from foraging in the hilltops around Mount Malumla, Upper Rouchel in the Upper Hunter Region of NSW.
The bulk of blossom is from the Eucalyptus (E) genus: Stringy Bark (E. obliqua); River Red Gum (E. camaldulensis); Forest Red Gum (E. tereticornis); Ribbon Gum (E. viminalis); Grey Gum (E. punctuate); Yellow Box (E. melliodora); Sydney Blue Gum (E. saligna); and White Box (E. albans).
There is also a hint of: Rough-barked Apple (Angophora floribunda); Blackberries (Rubus fruticosus); Black Boys (Xanthorrhoea australis); Wild Mustard (Brassica kaber); Scotch Thistle (Cirsium vulgare); Varigated Thistle (Silybum marianum); Saffron Thistle (Carthamus lanatus); and Dandelion (Taraxacum officianale).
These seasonal combinations bring rich, raw flavour to our honey. The flavour from each box varies, reflecting the blossom in season, carefully selected for pollen, nectar or both, by our clever bees.
